Many studies have proven beyond a doubt that our food doesn’t contain the vitamins and minerals that it used to. Here are the top reasons why: NPK Fertilizer We all agree that we are what we eat, drink, breathe and absorb. It’s the same for plants. Farmers figured out that NPK fertilizer (nitrogen, phosphorous, potassium) is like steroids to plants, giving them big and colorful crops that produce the best yield and highest profits. But just like humans, plants need a wide range of nutrients. Natural soils contain 52 nutrients that plants need to be healthy, but NPK only gives them 3. That’s why all measurements of NPK fertilized crops show nothing but a hollow mush void of nutrients. How can we be healthy if the food we eat is nutrient void? Cooking Heat destroys nutrients like vitamins, Omega-3 fatty acids, enzymes and proteins. Steaming and boiling vegetables leaches nutrients into the water. In general food should be left in a state as close to nature as possible. On the other hand, some vegetables need to be cooked to unlock nutrients and should always be lightly steamed. Processing & Preserving The food industry has done a marvelous job of making food last for years on the shelf instead of spoiling. Unfortunately, digesting food is essentially "controlled spoiling" in your stomach which unlocks nutrients. Every process to change food away from its original form to make it last longer also imprisons more of the nutrients. Transportation & Time Produce should be picked when ripe at the peak of its nutrient density and eaten before it spoils - it's the natural way of things. Large farms don't fit in the midlde of a city, so most are located in remote locations and must transport food across great distances. To avoid spoilage (and reduced profits) produce is harvested before it is ripe so it can survive the ride. Unripe food equals nutrient poor food. Many studies have shown that food loses its nutrients every hour it remains uneaten. Supplementation As a general rule I believe the first source of nutrients should always be food, but as we just discussed food is not enough these days.
